Ingredients
- 2 cups peanut butter
- 2 eggs, beaten
- 2 cups sugar substitute (Splenda, Stevia)
- 2 cups whole oats
- 2 tbsp vanilla
Directions
- Preheat oven to 350 degrees
- Mix ingredients in large bowl
- Once thoroughly combined, refrigerate for 1 hour
- Roll dough into small balls
- Place dough on baking sheet, 1 1/2 - 2 inches apart
- Press fork on top of each cookie to flatten
- Bake 15-20 minutes, or until golden brown
